Ingredients:

  • 8 oz Original Herkimer® Chocolate Cheese
    Fudge, cubed
  • 1 Egg
  • 1/2 cup Butter, softened
  •  1/2 Tsp. Vanilla extract
  • 1/2 cup Creamy peanut butter
  • 1 1/4 cup All purpose flour
  • 1/2 cup White sugar
  • 3/4 Tsp. Baking soda
  • 1/2 cup Packed brown sugar
  • 1/2 Tsp. Salt

Instructions:

Preheat oven to 325 degrees. Spray a mini muffin pan with non-stick spray. Using a hand mixer, cream butter, peanut butter, and both sugars. Mix in egg and vanilla. Add in the flour, baking soda, and salt.
When combined, measure out dough into 1 tbsp scoops into muffin pan. Bake for 14-16 minutes or until lightly brown.
As soon as they are removed from the over, press fudge squares into each. Optional: drizzle melted peanut butter over top. Cool and enjoy!
